The Dip is a Hit
I took this dip to two dinner gatherings this
weekend and both times there was but a smidgen left in the bowl at the end of
the evening.
I took it to my brother's
apartment on Saturday night for homemade enchiladas and martinis. (That boy can
cook!) And, yes, I have to admit that he and I alone polished it
off.

Sunday night for a casual dinner party with friends where seven additional
people helped finish it off. I tried to stay clear of
it!So I have to admit I stole this
recipe from my mom, but hey, I know a good thing when I see/taste it
:).Fiesta Ranch Green Chili
Dip1 pkg. Hidden Valley Fiesta
Ranch dressing mix1 pt. sour
cream1 4 oz. can diced green chilis,
drained1 4 1/4 oz. can chopped ripe olives,
drained1/2 c. finely shredded cheddar
cheeseCombine Fiesta Ranch mix with
sour cream. Stir in chilis, olvies, and cheese. Serve with chips, veggies, or
crackers.Cooks
Notes:*Let it chill
thoroughly.*I use a Mexican blend of cheeses
and always use more than 1/2 c. although I don't know how
much.
